Hey Guys!! I know that I have not posted in a while and I have been super busy with my best friend being deployed and my sister coming into town, I have not been able to sit down and finish documenting my travels, thus why this post is a bonus on top of ‘Henything’ so you can enjoy two reads! This one will be short and sweet.
My sister was heading back to Air Force duties the Friday after my Santa Barbara trip so on Thursday my mother, my sister, and I had one last dinner together. We tried an amazing place I believe everyone has to check out. It is called Tempo Urban Kitchen . The vibe and the food is amazing! This is definitely a spot you and friends can go to drink and just have fun. I highly recommend trying their Bone Marrow Tacos if you go!
The following Saturday, June 22, 2019, was the crawfish boil. This is my first actual attempt of doing the crawfish boil hands on, luckily I had my friend David on call even though he was in Vietnam ready to answer any questions I had. Phi and I had an early start at 8 a.m. We had to pick up the 60 lbs. of live crawfish from our supplier. After picking up the crawfish we headed to the market to grab a few missing ingredients and headed back to my place to start preparing. the day went something like this:
08:00 AM – Pick up 60lbs of live crawfish
09:00 AM – Go to Asian Market to pick up any missing ingrediants
09:30 AM – Stopped by Pickle Me Co (Banh Mi Sandwich Shop) and get breakfast and iced coffee
10:00 AM – Begin cleaning the crawfish and setting up the burners, pots, ingredients outside so I can prep while the crawfish boils
11:00 AM – Begin getting water in pot to a rolling boil, while water is heating, add in boil oil, seafood boil seasoning packs, and squeezed lemons.
11:30 AM – Crawfish is fully cleaned and pot has come to a steaming boil, drop crawfish into pot and cover.
12:00 PM – Began boiling potatoes and corn in a separate pot, began sauteing A LOT of garlic, started slicing two types of sausage, one regular and one spicy, created home recipe sautĂ©e seasoning blend, recipe compliments of David Nguyen.
12:30 PM – pot of crawfish came back to a boil, turned off heat and began hosing down all around the pot to bring down temperature below 115 degrees Fahrenheit.
01:00 PM – After not having proper equipment to cool down the crawfish, the pot was finally cooled and ready to be poured out and stored until final sautĂ©e process.
01:30 PM – Sent Phi to grab a box of raw oysters to be grilled, he also returned with 10 lbs. of chicken for me to BBQ.
02:30 PM – Began cleaning oysters and marinating chicken with my secret marination sauce. If you want to know a good trick to clean oysters and get all the sand out, clean and rinse oysters about 3-5 times, and then let them soak in clean water and add a cup of milk. The oysters will then start choking on the milk and start spitting out any sand they may have.
03:30 PM – began grilling chicken and oysters and guests started rolling in with non stop bottles of Hennessy.
04:00 PM – Began sautĂ©e process by adding butter to heated Brazier Pan, and then adding the sautĂ©ed garlic, after aroma starts letting out, added sausages, secret seasoning blend, secret ingrediant and 15 lbs. of crawfish, after finished, pour out crawfish and dump in corn and potatoes and mix in sauce. Pour potatoes and corn on top of crawfish and serve.
05:00 PM – Begin second batch of crawfish and take a few shots of Henny with the guests.
06:00 PM – Finish cooking 10 lbs. of marinated chicken and start third batch of crawfish
07:00 PM – Complete final batch of crawfish.
08:00 PM – Enjoy rest of the night with good company
11:30 PM – Finish 9 bottles of Henny, begin cleaning up all pots and pans while two friends sneak out to buy 2 more bottles of Henny.
12:00 AM – finish a total of 11 bottles of Henny, 10 lbs. of chicken, 60 lbs. of crawfish, 50 grilled oysters. I am tired. Kick everyone out because I am exhausted.
